Since then, Señor Pancho's Southbury has been a beloved family dining hot spot—a favorite destination for locals to savor the taste and feel of old Mexico through our famous margaritas and authentic dishes, especially during our vibrant Cinco de Mayo events.

While the tradition of authentic Mexican cuisine continues, the torch has officially been passed. We are proud to announce that Pedro Rosas—a familiar face to so many of you—has taken the helm as the new owner of the original Señor Pancho's Southbury location.

While the tradition of authentic Mexican cuisine continues, the torch has officially been passed. We are proud to announce that Pedro Rosas—a familiar face to so many of you—has taken the helm as the new owner of the original Señor Pancho's Southbury location.
Pedro’s story is a true testament to hard work and the Señor Pancho's family spirit. His journey began years ago as a busser in Litchfield under Jorge. When the Monroe location prepared to reopen after a devastating fire, Pedro was there as part of the original reopening crew. From those early days as a busser, he worked his way up through every role in the house—from server to bartender, and eventually into assistant management.
His dedication led him to join the management team in Prospect, before he finally landed here in Southbury. After years of serving as our longtime manager, Pedro was given the opportunity to purchase the original Señor Pancho's when Andy was ready to retire. We’re excited to see how he will continue to enhance the legacy of serving delicious Mexican dishes.

I grew up coming to the Pancho's family restaurants watching my dad work, first at Pancho's & Gringos and later Senor Pancho's under Andy. As life happens, I ended up also working for Andy and back then I never thought I would have the opportunity to work for Andy for such a long time and gain the experience of navigating the business in multiple locations prior to settling in Southbury, and then having the incredible opportunity to purchase the restaurant and continue what he started so long ago."
