About Senor Pancho's of Southbury

Our Origins

In 1989 in Southbury, CT, a young entrepreneur named Andy Adames began a tradition that would become synonymous with authentic Mexican cuisine. He promised himself he would weave his restaurant, Señor Pancho's Southbury, into the town’s fabric, providing locals with the best Mexican experience every time they visited. Since then, Señor Pancho's Southbury has been a beloved family dining hot spot—a favorite destination for locals to savor the taste and feel of old Mexico through our famous margaritas and authentic dishes, especially during our vibrant Cinco de Mayo events.

A Legacy Continued: Pedro’s Journey

While the tradition of authentic Mexican cuisine continues, the torch has officially been passed. We are proud to announce that Pedro Rosas—a familiar face to so many of you—has taken the helm as the new owner of the original Señor Pancho's Southbury location. 


Pedro’s story is a true testament to hard work and the Señor Pancho's family spirit. His journey began years ago as a busser in Litchfield under Jorge. When the Monroe location prepared to reopen after a devastating fire, Pedro was there as part of the original reopening crew. From those early days as a busser, he worked his way up through every role in the house—from server to bartender, and eventually into assistant management. 


His dedication led him to join the management team in Prospect, before he finally landed here in Southbury. After years of serving as our longtime manager, Pedro was given the opportunity to purchase the original Señor Pancho's when Andy was ready to retire. We’re excited to see how he will continue to enhance the legacy of serving delicious Mexican dishes.

Two Dates to Celebrate

 

At Señor Pancho's of Southbury, we take pride in honoring our roots while embracing our journey ahead. We will always celebrate our original anniversary in March to pay tribute to the decades of memories created within these walls, where authentic Mexican cuisine has been cherished by our loyal customers. However, October 13th will now hold a special significance in our hearts too—marking the day Pedro officially became the owner, ensuring that the Señor Pancho's tradition continues to thrive for generations to come. 

Señor Pancho's is here for you, and thanks to your support, we have proudly become one of the oldest family Mexican restaurants in Connecticut, renowned for our vibrant events and our unwavering dedication to authentic flavors.
